Pin Bone Out Single Fillets
Single fillet is a boneless fish fillet made by trimming the belly flap, removing the fins and tail, and removing the dorsal fin. The backbone, rib sections and major fin support bones are removed. The unconnected line of intra-muscular support bones (pin-bones) located above the parallel to the lateral line is also removed.

Pin Bone In Single Fillets

Pin Bone Out Butterfly Fillets
The butterfly fillet is an eviscerated fish that has removed the rib section, backbone, and head. All fins are removed including the pectoral fins the dorsal fin and the tail. Also, all of the later support bones are removed. The unconnected line of intra-muscular support bones (pin bones) located above the parallel to the lateral line is also removed. The belly flaps on the fish are also removed.

The PBO boned fillet is eviscerated fish that has removed the rib section, backbone, and head. All fins are removed including the pectoral fins the dorsal fin and the tail. Also, all of the later support bones are removed.

Pin Bone In Boned Fillets
The PBI boned fillet is eviscerated fish that has removed the rib section, backbone, and head. All fins are removed including the pectoral fins the dorsal fin and the tail. Also, all of the later support bones are removed.

Dressed Trout
The dressed trout is eviscerated fish. All fins are left intact. The head and tail remain intact on this product.
